These sprouts can be served as an appetizer or side dish.
1 pound brussels sprout, trimmed and halved
2 slices bacon, cooked and chopped
1 tablespoon extra-virgin olive oil
1/2 small red onion, diced
salt and pepper to taste
Red Pepper Jelly
Cook bacon strips in cast iron skillet or fry pan. When crispy, remove from pan and set aside. Heat olive oil in skillet and add onion. Cook until translucent, about 5 minutes. Remove onion from skillet and set aside.
Add brussels sprout to the skillet and cook until crispy and cooked through, about 15 minutes. When sprouts are done, add the red onion, crumbled bacon and salt & pepper.
Microwave red pepper jelly in small dish. Add a little water if it needs thinning out. Serve the warm jelly as a dipping sauce.
