Delicious spinach balls are the perfect appetizer to take to a party.  The flavors are fantastic and they can easily be made in advance. I make big batches and freeze them.  You must try them!

Spinach balls

2 (10 oz.) packages frozen chopped spinach
4 eggs, beaten
2 cups herb stuffing mix
1/2 cup parmesan cheese, freshly grated
1 garlic clove, minced
1 small onion, minced
1 teaspoon dried thyme
3/4 cup butter, melted
salt and pepper

Preheat oven to 325 degrees.

Cook spinach according to package, drain and squeeze very dry using paper towels. Mix all the ingredients well and chill for 2 hours. Roll into 1″ balls. If making them in advance to serve later, freeze them on cookie sheet, and then store in platic bags until needed. Thaw before baking. Bake for 25-30 minutes.
