It’s that time of year where apples are abundant! This is one of my favorite apple cakes. It’s a moist cake with an amazing glaze that really makes it!

Apple Cake

1 ½ cup vegetable oil
1 ½ cup sugar
½ cup brown sugar
3 large eggs
3 cups all-purpose flour
2 teaspoons cinnamon
1 teaspoon baking soda
½ teaspoon fresh ground nutmeg
½ teaspoon vanilla
3 ½ cup diced, peeled cooking apples
1 cup coarsely chopped walnuts
Brown Sugar Glaze

Beat 1st 3 ingredients. Add eggs one at a time, beating after each addition. Combine flour and next 3 ingredients, stir into mixture. Stir in vanilla and walnuts. Fold in apples. Pour into a greased and floured pan (tube, bundt or sheet cake pan). Bake at 325 for 1 hr and 30 min. Time will vary depending on how hot your oven is and the type of pan used. A sheet cake will cook quicker than a tube or bundt pan. Begin checking after 1 hour by placing a toothpick in the cake. Cool 10-20 minutes and glaze with warm brown sugar glaze.

Brown Sugar Glaze

1/3 cup butter
1/3 cup sugar
1/3 cup brown sugar
1/3 cup whipping cream
½ teaspoon vanilla

Combine 1st 4 ingredients in a heavy sauce pan. Bring to a boil, stirring constantly and boil 1 minute. Remove from heat and stir in vanilla. Drizzle over cake.
